Getting Fresh: Chicago chefs go (very) local with on-site herb gardens

Sustainable, local agriculture is an increasingly popular trend, and urban green roofs are in on it. Executive Chef Kevin Hickey, of the Four Seasons Hotel Chicago, plans to use the new green roof over the hotel at 900 N. Michigan Avenue to produce the freshest possible vegetables and herbs for his specialties. DMA is proud to have played a role in creating this growth opportunity.
